Unfortunately, I know of no "all in one" setups.  You could buy game hosting from some companies (like I believe SPOKE provides).  I think with them you set your settings and off you go.  The alternative is you have a dedicated server somewhere that you manually set up.

I have the second route.  I now have a setup that is heavily customised for me (and allows me to quickly move it around to different systems without having to change stuff.. which I love).  It's built from knowledge over the years.. but the cores are:

<chroot doco from tjw, creator of etpub.org.. unfortunately the doco isn't there anymore> - doco on creating a chroot/self-contained environment for security.  I've done quite a bit of work off it though, as it was out of date.
<etadmin_mod doco.. there's lots of random stuff out there> - doco for etadmin_mod, which allows some extra stuff.  NQ actually handles a large majority of what etadmin_mod does now, I just haven't moved over.
<random map sites> - for maps.

That's all I can think of offhand.  Not totally helpful, I know.. but that's how I have it set up.  Mainly a lot of experience and trial and error
